Tried and To-Try

Hello PEOPLE! I apologize apologize apologize I have been so slack lately with the blog posting (as always right? my bad.) I have 3 tests this week and my head is about to spin off! I am just SO busy! But guess what....
TOMORROW I GO HOME FOR FALL BREAK! 
I know it sounds so cliche, but there really is NO place like home. I am ready for some rest and relaxation! Not to mention a trip to Boone, Disney World, and The Big Apple...but thats beside the point...I don't want to make ya'll jealous (insert winking face). Bring on fall break, I am SO ready! In other news, the fashion around ECU has been changing rapidly and definitely looking the most fierce its been this year! Students are pulling out their threads for cooler weather and I am loving it! Haven't you noticed? The crisp air has finally traveled its way down south to Greenville! Hallelujah! Here are some looks that I have seen lately around my campus....


BOOTS 
duh...if you aren't wearing boots in this fall (I'll still love you) but you better get with the program.
LAYERING & BOYFRIEND CARDIGANS
Lots of guys and gals have been sporting baggy boyfriend cardigans open or buttoned alone with crew neck shirts and sweaters.
SCARVES
I don't think I can put into words how many girls were wearing a scarf at the last Pirate football game...including myself. They are an Autumn essential!
TORTOISE SHELL WATCHES & GOLD JEWELRY
This is pretty much ESSENTIAL this season! Constantly chic and perfect with black or brown.
BAGGY SWEATSHIRT STYLE SWEATERS
What lady doesn't love a baggy comfortable sweater? I know I'm obsessed.
BIG GLASSES
Yes I do wear glasses, but are the huge stylish ones I have really prescription? Maybe, maybe not...

Aren't those trends perfect for the fall? I'm in love with all of them and I literally have been trying to wear one every single day...unless I am in a T-shirt, sweatpants and UGGS which has pretty much been my go-to unfashionable ensemble lately. Today I wanted to share with ya'll some things that I am dying to try AND some things that I have tried and LOVED! Ready for this? I know after you read this you will want to try them too...

TO TRY
1. Decorative nails. Look how chic these coral colored nails are! I love them and I will definitely be searching for a nail-polish pen so I can get those striped nails!
2. Chocolate Puff Pastries. When my family and I went to Paris a couple years ago we ate pastries like almost every single day and they were SO amazing. I think it would be wonderful to find a cheap and easy recipe so I can imitate that Parisian decadence at home! 
3. Red lips. I have always been hesitant to try red lips since I have a really strong red tint to my skin but with my fringy bangs I feel like it is a must this season! Are you brave enough to try them?

4. Hot Spinach and Artichoke Dip. How delicious does that look?? This is one of my favorite appetizers and I think its perfect for enjoying a fall day with your family in front of a football game!

TRIED
1. Pumpkin Chocolate Chip Muffins. I was trying to figure out a sweet treat to take to a movie night with my sorority and I KNEW I had to do something involving pumpkin since it felt like such a perfect autumn day! Some of the ingredients for the recipe I was going to use were out of stock at the grocery store so I kind of made it up but seriously these muffins were AMAZING! Scroll down for recipe...
2. Thigh high socks. The other day when I knew it was going to be a cool fall day outside I pulled out a pair of my thigh-high socks and rocked them with my knit shorts and boots. I loved how it turned out and I will definitely be doing it again soon!
3. Asian Pasta. I know that I constantly post about asian pasta because it is my favorite but I made up an EXTREMELY simple recipe the other day and I thought I would share it with you! Scroll down for recipe...
4. A collard shirt under a sweater. I have always thought that this looked a little "nerdy" but it has been all over the fashion world and I really love how it looks. I actually accidently tried it a while back when I was home and I thought it looked so cute so I am pulling that trend out tomorrow!

RECIPES

PUMPKIN CHOCOLATE CHIP MUFFINS

2 boxes of Pillsbury yellow cake mix (just the dry mix, you dont add the other ingredients that are listed on the cake directions)
1 29 oz can of Libbys pure pumpkin
1 bag of milk chocolate chips
1 tsp of vanilla extract
2 1/2 tsp of cinnamon
2 1/2 tsp of nutmeg

In a VERY large bowl (it makes a lot) blend all ingredients together with a hand-held mixer and then spoon batter into greased muffin tin, or a mini muffin tin like I used! If you don't like to grease the pan then you can use a regular muffin tin with muffin cups in it! After filling the pan bake it for about 20 minutes. Stick a toothpick or knife into the center to make sure they are done, and thats all. ENJOY!

ASIAN PASTA

1 bag of Snap or Snow Peas (finely chopped)
1 bag of shredded carrots
Frozen Chicken (as much or little as you enjoy eating)
1 bottle of Kraft Asian toasted sesame Dressing/Marinade
1 bottle of soy sauce
1 bottle of sesame oil
whole wheat linguini noodles
vegetable oil

Thaw out frozen chicken, remove fat and cut into small cubes. Poke holes with a fork into the chicken so that it can really soak up the marinade! Mix together 1 tablespoon of soy sauce, 2 teaspoons of sesame oil, and 1 and 1/2 cups of Asian toasted sesame dressing in a bowl. Pour chicken and marinade into a Tupperware container, place lid on top and let sit in fridge for at least 3 hours. After letting the chicken marinade, fill a large skillet with a little bit of vegetable oil and cook the chicken until it is done. While cooking the chicken you can boil the noodles. After the chicken is done, pour as many carrots and as many chopped snow-peas into the same skillet and saute them all together until the vegetables are slightly cooked but still crunchy. Drain noodles and then pour noodles and chicken and vegetables into a bowl and top with as much asian toasted sesame dressing as you like (just taste it and see, don't over do it) and that is all! It tastes just as good, if not better, the day after so make sure you save your leftovers! EAT UP

Magazine Madness

I love magazines. Whenever I'm in line at the grocery store I feel like my hand is magnetized towards the magazines and I have to restrain myself from walking out without a copy of Glamour or Elle in hand. They are so fun to read, they're shorter than novels and yet not near as boring as a text book...AND you can't get a heavy dose of fashion inspiration from a magazine! As many of ya'll probably read in some posts a while back, Charlotte Style Magazine granted me the privilege to write a fashion article about Fall 2011 Runway trends and I was DELIGHTED to do it! Yesterday it was finally published and I couldn't be more thrilled with the outcome! Not only did the article come out great, but my picture was on the contributors page and the layout was designed by my oh-so-talented twin sister. The final product looks PERFECT and I am so proud of us both!

You can Talk the Talk...but can you Walk the Walk?

WOW. I have been absolutely BOMBARDED with things to do lately. I am SO terribly sorry that I haven't updated lately!
I have been running around like a maniac. My plate has never been this full and, with a joke from my oh-so-clever boyfriend, I am not a fast eater (ha-ha-ha)! I feel like I am juggling about 40 different things, when in reality I just need to work on my time management. Sometimes I wonder if I just talked it up that I could handle all of these things when in reality I just "wanted" to be able to...but I know I can do it! I just need to get organized. The beginning of the year is always the hardest time for me to get myself together. I still haven't bought the curtains for my room yet?? Get a grip Lindy. Thankfully the air is getting cooler and things are starting to slowly but surely fall into place (pun intended). 


Anywho, let me fill you in on what's been going on around here lately! 


1. The beautiful and talented Leslie from A Blonde Ambition (the blog I intern for) just got married!! I know that we have never "officially met" in person but it has been over a year since I started interning with her and I couldn't be more thankful for the opportunities she has cast my way! She is insanely sweet, her blog is awesome, and I am so happy that she is finally married to the man of her dreams! Congratulations, boss!
2. Secondly, my amazing twin and best friend Laura (click this to get to her blog) has been given the opportunity to launch and lead, as the President and Editor-In-Chief, Her Campus Magazine- Appalachian State University! She picked a talented team, vigorously set up all the online shenanigans, and officially launched the online magazine yesterday! I LOVE how it turned out and I am so proud of everything she has accomplished. One thing that I am thankful for is being blessed with a wonderful family that is full of driven members set on making a name for themselves. I can't wait to see all the fun posts and articles that are updated each and every week! So make sure to check out Her Campus at Appalachian and add it to your favorites or your tool-bar because it will surely keep you coming back to read more and more!
3. Thirdly, I have been absolutely crazy about CollegeFashionista! This experience may not be easy, but it is definitely rewarding and I wouldn't change it for the world! Last week I took a picture of a fashionable fella wearing some burgundy pants that I WANTED. I have a severe case of the burgundy blues. I mean who doesn't love some colored pants!? 4. Fourthly (btw I don't even know if you can really "phrase numbers" like this but I'm doing it anyways) I feel awful because I never got to show ya'll those pictures I promised I would about Back to School fashion! My lovely friend Allison took these shots a while back and I am going to share little bits and pieces of them right now as a tiny treat because they are just too great to forget about! Enjoy....



I know that this post was just a mess of things thrown together but I knew I needed to update! The budget copy of my next fashion column in The East Carolinian is due tonight and I am super excited to share with ya'll what it's going to be about so make sure you stay tuned, readers!
